Cheesy Chicken Pierogi Bake

I know....this is actually a Polish dish, I need to get a button up for Poland, still new to the blog so sticking with Italy right now. Forgive me!  I'll get it up on Poland one day but I couldn't resist making this Cheesy Chicken Pierogi Bake, it's so delicious and my husband couldn't get enough. It's so filling and full of texture even I was surprised at how much I loved this dish. I also loved how easy it was to put together. This dish is now part of our monthly dinner plans. Delicious!

crispy bacon (Cook the bacon until crispy and chop it up.)

unsalted butter
1⁄4 c
1 1⁄2 c
Chicken Broth
1 1⁄2 c
half and half
1 t
garlic powder
1 t
onion powder
1 t
Italian seasoning
1 pn
cayenne pepper
1⁄2 t
black pepper
8 oz
Italian cheese blend
5 oz
shredded Parmesan cheese
8 oz
pre-cooked chicken (diced)
2 c
frozen peas
16 oz
frozen cheese pierogies
1 T
fresh parsley (chopped)


Preheat oven to 400 degrees F

1. Layer pierogies in baking dish
2. In a saucepan melt butter, whisk flour in and cook for 3 minutes
3. Add chicken broth, half & half, garlic, onion, Italian seasoning, cayenne and pepper. Whisk until blended
4. Mix in Italian cheese and half of Parmesan cheese
5. Add frozen peas, and cooked chicken and bring to a boil
6. Pour mixture over pierogies. Sprinkle remaining Parmesan cheese on top
7. Bake for 15 minutes, until golden brown
8. Top with bacon and parsley while still hot
