Chocolate Framboise

Raspberries and chocolate are a wicked duo, how irresistible and delicious.  This flourless dark chocolate rich cake has a dreamy texture to it, almost like a creamy mousse. What a wonderful way to end a meal – you know you’ll love it!


I enjoy watching ‘French Food at Home’ and I just couldn’t resist making this – I’m so glad I did.

3⁄4 c
12 oz
dark chocolate (chopped into small pieces)
1⁄2 c
1 c
Butter (unsalted)
1 T
Kirsch (OR Crème de Framboise )
fresh raspberries for garnish
1 1⁄2 c
whipping cream
1⁄4 c


1. Blend the raspberries into a puree and strain to get rid of seeds
2. In a large bowl, add chocolate, sugar and raspberry puree
3. Place bowl over saucepan of simmering water and mix until melted and creamy
4. Add butter to mixture, one piece at a time, it will become glossy and thick
5. In a separate bowl pour in kirsch or Crème de Framboise and add eggs one at a time, mixing well
6. Add eggs to chocolate raspberry mixture
7. Line with tin foil the inside of a round baking dish
8. Strain mixture into the baking dish and place in a large roasting pan
9. Create a water bath by filling the roasting pan with simmering water until it reaches halfway up the side of the round baking dish
10. Bake at 325°F for 40 minutes
11. Let cool. Place in fridge
12. Whisk cream and sugar together
13. Place Framboise over cake plate
14. Cover with cream then garnish with berries
