Chicken Pecan Salad

This is one of my favorite salads and I’ve been making it for years.  I tried to see if any country in Europe makes a salad like this and the nearest one I could find was in France but they use almonds not pecans and different cheese.  However, my research on French salads actually opened up a new discovery about France and their salads and I’m so excited to try out more salads from this country, so be on the lookout!  I have also been reading up on Julia Childs books and her amazing love for French food and WOW, she has some great recipes that I’m looking forward to trying out.

In the meantime, why don’t you try out this delicious Chicken Pecan Salad for yourself – it might not actually be from France but it’s heavenly. 





This salad serves 4 poeple

2 c
cooked chicken (cut up)
bag of fresh spinach
1 c
pecans (i like to use candied pecans)
1 ct
Feta Cheese
1 c
dried cranberries
raspberry vinaigrette dressing


Mix together all the ingredients and serve with Raspberry vinaigrette dressing
