Eating clean meals, food that is fresh and delicious can be part of that journey. We love salads at our house and there's such a variety to choose from but it's important to keep it clean, and that includes the dressing.  This is one of my all time favourite salads, it's packed with flavour and the dressing is to die for. Can it really be that healthy? Oh yeah...

4 c
Romaine Lettuce
large cucumber (sliced)
1 1⁄2 c
cherry tomatoes (cut in half)
medium red onion (sliced)
3 1⁄2 oz
Fresh Feta cheese (diced)
3 T
pine nuts
1⁄2 c
fresh sweet corn
2 T
Avocado oil (or olive oil)
2 T
sherry vinegar
sea salt and pepper
small bunch of cilantro (finely chopped)


1 Cover a large plate with the romaine lettuce and then arrange all the veggies into layers on top of the lettuce, including a layer of finely chopped cilantro
2 Make the dressing in a small bowl by whisking together the oil, vinegar, salt, pepper and 1 tablespoon of finely chopped cilantro
3 Dish up salad onto plates and drizzle with dressing
